Ingredients:
•4 eggs •1/2 cup breakfast sausage, cooked and crumbled •1/2 cup shredded cheddar or pepper jack •2 large flour tortillas •1/2 tsp Big Haole’s Pika Seasoning •1/2 cup pineapple salsa (store-bought or homemade) •Butter or oil for pan
Instructions:
1. Scramble eggs with Pika Seasoning. Add sausage near the end. 2. Assemble quesadillas: Layer eggs, sausage, cheese in tortillas. 3. Cook in skillet with a bit of butter until golden and crispy. 4. Slice and serve with pineapple salsa on the side or spooned on top.
